Easter goatling Rice
Ingredients:
•Half goatling
• 3 garlic cloves
• 1 bay leaf
• 2 dl white wine
• 80 g of lard
• 1 onion
• 50 ml of olive oil
• 300 g of rice
• 1 teaspoon saffron
• 6 dl of water
• 1 sprig of parsley
• salt and pepper q.b
Preparation:
Step 1
The kid is cut into pieces; Season with chopped garlic, salt, pepper and white wine. Let it marinate from one day to the next.
Step 2
Turn the oven to 220º. Transfer the meat, into a pyrex to the oven and spread with lard.Pour the middle of the oven, for 40 minutes.
Step 3
Chop the onion and fake it in the oil. Add rice and saffron and season with salt.
Step 4
Rinse with boiling water and let it cook on a low heat. Put the rice in a bowl to go to the oven and on top, put the kid.
Note: You stir the rice, so that the saffron has a uniform color.
Step 5
Return to the oven for about 20 minutes. Serves decorated with parsley.
